Harira
My friend gave me this recipe that she makes a lot. It's basically just a Moroccan version of tomato soup. Warming and delicious.
2 carrots
2 celery sticks
2 - 3 chopped tomatoes
1 can chickpeas
4 potatoes
1 large onion
2 tbs coriander
1 tbs cinnamon
1 tbs tumeric
1 tbsp - grated ginger
1 liter veggie or chicken stock
pinch of chili pepper seeds and black ground pepper.
~chop up onion into a chunks, fry in pan with a bit of oil, until soft
~dice all the rest of the veggies
~once onions are soft, put into pot with veggie stock, spices, and the veggies and the chickpeas
~bring to boil for 10 minutes, then let simmer for at least an hour.
Serve hot with crusty bread or roti.
Serves about 6. You can add more veggies or diced chicken and increase the amount it can serve
