Sweet Potato
Pork Stew
It’s the time of the month (and employment status, since Ken just started a new job) where I’m scrambling through the deep freeze looking for stuff to cook so I have to go to the grocery store as seldom as possible. This week it’s a frozen pork loin we found on sale at Costco a while ago. It’s getting pretty warm, so this is probably the last hearty “comfort food” style dish I’ll be making this year. Use this meal to say goodbye to cold weather, sweaters, and frosty mornings… spring is on the way!
You’ll need an Instant Pot or other pressure cooker for this recipe.
1 lb pork loin
2-3 sweet potatoes
2 large apples (I used Cosmic Crisp bc I had them, but Granny Smith or Gala would work too)
½ cup apple cider vinegar
1 Tbs chicken boullion granules in ¼ cup water
1 Tbs soy sauce
1 Tbs salt-free garlic herb seasoning
2 Tsp Penzey’s Krakow Nights seasoning
1 Tsp Penzey’s beef soup seasoning
Peel and core apples, peel sweet potatoes. Dice both in ¾” pieces. Cut pork into ¾” cubes.
Dump everything into the Instant Pot and stir so ingredients are well mixed. Cook on Manual/High pressure for 30 min. Wait for natural release (don’t manually vent).
It’s so freaking good!
