Pumpkin Pie Oatmeal
OK so I’m torn. It’s in the high sixties, low seventies here during the day and into evening, but it’s chilly in the mornings. So I want hot food AND cold food. This oatmeal is perfect for both: make it in the morning for a hot breakfast, and in the evening eat it for a semi healthy (?) dessert.
While you’re combining the ingredients, think about how salt was used as money- you’re “paying” for the spell to work, and bring abundance into your life. Cinnamon hurries the spell along, or pie spice is full of prosperity-inducing ingredients. Pumpkin itself is the symbol of harvest and abundance. Finally, butter brings in the “fat of the land” so your table or cabinet won’t be empty.
I’m avoiding white sugar so I used monkfruit but you can use white or brown sugar or maple syrup if you like- if you use maple syrup probably leave out the maple extract.
1 ½ cups oatmeal (not quick)
2 ½ cups plus 2 Tbs water
¼ tsp salt
1 tsp cinnamon (or pumpkin spice)
¼ tsp maple flavoring/extract
½ tsp vanilla
2 Tbs monkfruit sweetener (add more or less to taste)
1 Tbs butter
½ to ¾ of a 15 oz can of plain pumpkin
Stir together the oatmeal, water, and salt and put in the fridge overnight.
The next morning microwave it for 4 min, stir, and microwave for 4 more minutes. Stir in the cinnamon, maple flavoring, and vanilla, and microwave 2 more minutes.
Stir in the butter, pumpkin, and sweetener. I prefer it with ¾ a can of pumpkin, but I usually only use ½ a can so I can use the other can when I make another batch. Refrigerate when it tastes good- but I always have a bowl while it’s hot, too.
It would be great with chopped pecans when it’s hot. It’s really good with whipped cream when it’s cold.
