Lucky Salad

This recipe has ingredients traditionally eaten on New Year’s Day (or eve) for good luck in the coming year. I used Kat’s recipe for Cowboy Caviar and tweaked it to include the lucky foods, and also to use up stuff I had in my fridge already.

  • 1 12oz  can black-eyed peas (to represent coins), rinsed well

  • 10 oz bag frozen corn, thawed (represents gold)

  • 1 can Rotel tomatoes and chiles

  • ½ to 1 cup roughly-cut collard microgreens, bean sprouts, or other microgreen of choice (leaves represent paper money)

  • 1 avocado, diced

  • 1 jalapeno or other hot pepper, finely diced, and/or tablespoon of hot sauce of choice

  • ½ to 1 cup crumbled feta, cotija, or shredded parmesan

  • Pinch salt, pinch sugar

  • A few grinds of Trader Joe’s African Smoke pepper seasoning, or just freshly ground black pepper

  • 1 tablespoon apple cider vinegar

  • ¼ to ½ cup Italian dressing (I prefer Olive Garden brand but probably any dressing would work)

  • Minced cilantro 


Mix everything in a bowl at least 24 hours before you plan on eating it. Serve with tortilla chips. Perfect for your NYE party, or add some cumin and serve over recovery brunch chilaquiles the next day.
