Unwitchy Chocolate Eclair Cake

Is this witchy? Hell no. But this dessert is SO easy, you’re basically just shaking a jar and dumping it onto crackers. It actually tastes really good.

1 “family size” package vanilla pudding (the bigger box)

3 cups half and half, or however much it says on the pudding box for pudding, NOT pie

2 sleeves graham crackers

2/3 cup Semisweet chocolate chips

½ cup Heavy cream

Add the half and half and the pudding mix to a bowl or jar with a lid. Whisk it well if you use a bowl, or add the lid and shake it to blend in the jar. Check the chocolate chips to see if they’re melting- stir if you want.

Line a 6x9 (or about that) casserole dish with graham crackers and pour a thin layer of pudding over them. Keep layering pudding and crackers, ending with a layer of crackers on top. 

Put it in the fridge for about an hour.

After an hour, make a double boiler to melt the chocolate. Heat about an inch of water in a pot small enough to put a metal or glass bowl overtop. Be careful- if you get water or steam into the bowl with the chocolate, it’ll seize, and get gloppy and weird and it’s complicated to fix. Stir periodically. When they’re melted, gently stir in the heavy cream with a spatula. When it’s completely blended, pour/spread over the top layer of crackers and put it back in the fridge overnight. 

Is it fancy? No. It is bizarrely delicious though.
